This orecchiette with broccoli dish is a simple recipe that comes together quickly and is a great first course for any Italian meal or can serve as a light dinner on its own. Orecchiette, an ear-shaped pasta, is perfect for this dish, but you can substitute other shaped pasta like penne, fusilli or farfalle. This great vegetarian dish can be easily paired with a fresh salad and pizza bianca for a wonderful meal. We promise you that you will never look at broccoli the same way after a sample of this dish.
INGREDIENTS FOR ORECCHIETTE WITH BROCCOLI:
- 1 (16 ounce) box orecchiette pasta
- 1 tablespoon sea salt
- 3 cups broccoli florets, fresh or frozen
- 2 tablespoons olive oil
- 2 garlic cloves, peeled, minced
- 1 teaspoon crushed red pepper
DIRECTIONS FOR ORECCHIETTE WITH BROCCOLI:
- Fill large pot with warm water and add sea salt. Bring water to boil and cook pasta according to package directions
- Steam broccoli for approximateli 5-7 minutes. Drain and set aside
- In medium skillet combine olive oil, garlic and crushed red pepper. Cook over medium to low heat until garlic is just about golden
- Add broccoli and 1 teaspoon salt and saute’ over medium heat for about 10 minutes. Broccoli should be tender but not mushy
- Drain pasta and add broccoli mixture. Serve piping hot and enjoy!
