Mozzarella and Tomato Panini

Panini

Only the freshest ingredients will do this Mozzarella and Tomato Panini (Schiacciate con Mozzarella e Pomodoro) any justice.  The combined flavors of fresh mozzarella, fresh basil and fresh tomatoes is, well, refreshing to say the least.

Ingredients for Mozzarella and Tomato Panini:

  • 1 recipe White Pizza with Herbs, rolled out
  • olive oil
  • 8 slices fresh mozzarella
  • 2 tomatoes, washed and sliced
  • 8 leaves fresh basil

Directions for Mozzarella and Tomato Panini:

  • Preheat oven to 400°F.
  • Brush small amount of olive oil over top of dough.  Place in oven and bake about 30 minutes or until pizza crust is a nice golden brown.
  • Remove from oven and cool before cutting.  Divide pizza crust into quarters, slice open and place mozzarella, tomato slices, and basil inside.
  • Sprinkle salt to taste and drizzle a little olive oil inside each panini.

Serves 4.
