<li>Preheat oven to 400°F.</li>
<li>Combine drained ricotta, strips of ham, mozzarella, parmigiano, and salt and pepper to taste in a large bowl.  Stir to mix well and set aside.</li>
<li>Place ball of dough on floured surface and divide into 4 balls.  Roll each ball into flat circle about ½ inch thick.  Brush olive oil over each circle and sprinkle a little salt over top.</li>
<li>Divide filling amount among 4 circle, place filling on half of each circle and leave 1 inch border.  Fold other half of circle over filling and pinch edges to seal.</li>
<li>Spray non-stick spray on baking sheet and place each calzone on baking sheet.  Brush olive oil on outside of each calzone.  Place in oven and bake about 30 minutes.</li>

<p>Ingredients for <strong>Pizza Margherita</strong>:</p>
<ul>
<li>1 recipe <a href="http://www.truetasteofitaly.com/basic-pizza-dough/">Basic Pizza Dough</a>, rolled out</li>
<li>3 tablespoons olive oil, divided</li>
<li>1 (28 ounce) can whole peeled or crushed tomatoes with juice</li>
<li>1½ cups shredded mozzarella cheese or freshly sliced mozzarella cheese</li>
<li>8 leaves fresh basil, chopped</li>
</ul>
<p>Directions for <strong>Pizza Margherita</strong>:</p>
<ul>
<li>Preheat oven to 400°F.</li>
<li>Brush 1 tablespoon olive oil on pizza dough and place in oven to bake for approximately 5 minutes, then remove.</li>
<li>Spread tomatoes evenly over top of pizza, then distribute cheese evenly to cover.  Add salt and pepper to taste and drizzle remaining olive oil.</li>
<li>Bake about 30 minutes.  Remove from oven, sprinkle chopped basil over pizza and serve.  Enjoy!</li>

<li>2 cups finely shredded lettuce</li>
<li>3 tablespoons mayonnaise</li>

<ul>
<li>Preheat oven to 400°F.</li>

<p>Ingredients for <strong>Three Cheese Pizza:</strong></p>
<ul>
<li>1 recipe <a href="http://www.truetasteofitaly.com/basic-pizza-dough/">Basic Pizza Dough</a>, rolled out</li>
<li>3 tablespoons olive oil, divided</li>
<li>1/2 cup shredded mozzarella cheese</li>
<li>1/2 cup shredded fontina cheese</li>
<li>1/2 cup crumbled gorgonzola cheese</li>
<li>2 leaves fresh basil, chopped</li>
</ul>
<p>Directions for <strong>Three Cheese Pizza:</strong></p>
<ul>
<li>Preheat oven to 400°F.</li>
<li>Brush some of olive oil on pizza dough, sprinkle a little salt on top and arrange three cheeses on it.</li>
<li>Drizzle remaining olive oil over pizza and place in oven.  Bake about 30 minutes.</li>
<li>Remove pizza from oven, sprinkle chopped basil over top and cut into wedges.  Enjoy!</li>
</ul>
<p>Serves 4.</p>
<p><em>Tip:  Instead of using shredded mozzarella cheese, try using thin slices of fresh mozzarella arranged around the pizza.  Fresh mozzarella can sometimes be difficult to find in the grocery store, but it is a true delight if you can manage to find some locally.</em></p>

<li>4 tablespoons mixed fresh herbs (rosemary, basil, parsley, sage, or thyme)</li>

<p>Directions for <strong>White Pizza with Herbs:</strong></p>
<ul>
<li>Preheat oven to 400°F.</li>
<li>Brush 2 tablespoons olive oil on pizza dough and sprinkle some salt evenly over dough.  Distribute herb mixture evenly over dough.</li>
<li>Drizzle remaining olive oil and some pepper to taste and place in oven.  Bake about 30 minutes.  Crust should be nice and golden brown.</li>
